Today, is New Years Day and I’m planning to get my lifestyle in order. (I say this every year, btw). I think I’m going to try to cut out carbs and processed food from my diet as much as possible. I’m also going to attempt to take off the entire month of January from drinking. I’m sure a few days from now I’ll have reverted to my old ways, but you have to at least try, right? To kick off my new low carb lifestyle, I made a bacon and egg low carb quiche for breakfast this morning. It’s been a while since I’ve made a quiche, so I looked up a few recipes to figure out how it’s generally done and then came up with my own variation. That’s usually how I cook anymore. I rarely follow recipes.
I started by making a low carb “crust” out of steamed broccoli and roasted cauliflower leftover from dinner last night. I mashed it into the bottom of a glass pie dish and covered it with a little shredded mozzarella.
Then, I sautéd mushroom and onion and added that on top of the broccoli and cauliflower.
Next, I crumbled up a few strips of crispy bacon and added it as the top layer of deliciousness.
Finally, I covered everything with 6 scrambled eggs and a little more shredded cheese.
This is what it looked like after 30 minutes at 350 degrees in the oven. Pretty rad.
It tasted delicious too. The bacon and eggs worked really well with the broccoli and cauliflower crust. It was surprisingly light and fluffy too. A great way to kick off the new year.
